No EL_ULY no! Try this instead: Korean BBQ tacos

Shopping list:

Fresh-made tortillas

Cilantro

Limes

White onion

Short ribs, bone in

Favorite Korean BBQ sauce (or make your own)

Beer (Shiner is good)

Adobo Seasoning

Asian Slaw (HEB has a good one)

Apple Cider Vinegar

Sesame oil

Mesquite Charcoal and Brickettes (if not already there - nothing with lighter fluid)

Aluminum roasting pan and foil

Instructions:

Season ribs with adobo and set aside

Light the coals, have enough to get 2 - 3 hours of heat

While the coals are getting ready chop up half the onion and some of the cilantro, slice a few limes

Once the coals are ready grill the ribs until they have a nice sear but not to a fully cooked state

Place the ribs in the aluminum pan and cover with BBQ sauce

Add beer, chopped onions, cilantro (some water to add liquid until the ribs are half covered) and limes

Cover the pan with foil (seal it well so the steam stays inside the pan)

Place the pan with the ribs on grill and close it (ok if not a grill with a lid but better to get the dutch oven effect)

Make sure temperature of the grill is in the 350-400 degree range

Do not disturb for 1.5 hours (just let it be, drink a couple of beers)

Warm up the tortillas

Prepare the Asian slaw mix in a bowl, add vinegar and oil and the included seasonings

Check the meat, it should be falling off the bone

Once ready de-bone the rib meat and chop it into small pieces

Place the meat back in the pan so that it absorbs the pan juices (should be a nice sweet savory sauce)

Chop some more onion and cilantro for garnish

Make your tacos and eat

It started in NYC I think and the bakery there had lines out the door every morning. The bakery here in SF runs out of them every morning. Malasadas in Hawaii are good too but not as good as a cronut.

Yes, but that is something you enjoy while it's frozen! If you're warming it up after taking it out of a box, it will never taste fresh. Freshness is super important to me.
